Roasted Tomato Xtra Hot Sauce is my homage to Tomato Choka, a beloved Trinidadian dish made with fire-roasted tomatoes, garlic, and hot peppers. It’s my simplest recipe in terms of ingredients, but it packs an extraordinary punch — just like the dish that inspired it.

This extra-hot sauce combines the smokiness of roasted tomatoes with layers of fiery heat from Scotch bonnet, Trinidadian scorpion peppers, and bird’s eye chillies. The result is bold, clean, and uncompromising — a sauce made for true chilli lovers.

It’s also completely sugar free, letting the natural roasted tomato and pepper flavours shine through. Use it to fire up tacos, burgers, grilled meats, or drizzle sparingly over vegetables. Stir into soups, stews, and sauces for depth and serious heat.
