Bottled at the instigation of Helen Goh from Ottolenghi who tasted one of Bill Poon’s jars, it has become a favourite of many foodies. Unusual in that it uses salted black beans, Poon’s Extraordinary Chilli Oil has a depth and intensity beyond just heat.
Drizzle over: Noodles, rice, dumplings, dim sum, fried eggs, pizza, roasted vegetables.
Stir into: hummus, pasta, sauces, marinades, salad dressings, stir-fries.
