Idle Hour
A semi-hard cheese with a natural edible rind.
Initially, it has a crumbly texture. As it matures, it ripens from the outside in, becoming softer and more buttery.
It starts with bright citrus notes, with a hint of nut. As it ages (16-20 weeks) it develops a creamier taste with complex, savoury depth, whilst retaining those citrus undertones.
A versatile cheese that will enhance any cheeseboard, and pairs well with seasonal fruit.
