Annie Hanbury, founder of Baboo Gelato, doesn't believe in short cuts. Here she explains how we make our Three Star award winning gelato
At Baboo Gelato we don't believe in short cuts. At our lab in Dorset we make everything from scratch using the best ingredients we can source. Our organic milk is delivered from a nearby dairy every evening. We buy our fruit from local orchards, or where not possible, directly from a family farm in Sicily. Our chocolate comes from Valrhona; our mint from Summerdown Mint, our salt from Dorset Sea Salt. 

But great ingredients are nothing without the right recipes. We've spent nine years perfecting our recipes, and I still travel to Grosseto in the winter to work with an expert on flavour balancing. This is what makes our textures so smooth, and the taste so intense. 

We are proud of the way we produce our gelato and we invite you to visit us. Once you see the care we put into our production you'll never think of gelato the same way again.
