It all started when Willy Chase, our founder and farmer, stumbled across a forgotten barrel of ACV quietly fermenting in his barn. That moment sparked a journey into the wild world of fermentation and gut health. Today, Willy’s ACV is more than just vinegar, it’s a celebration of nature, wellness, and flavour.
Our apples are grown in 48 acres of untouched orchards, where biodiversity thrives and the soil is nurtured through regenerative farming. We ferment slowly and naturally, keeping all the good stuff intact, like live cultures, enzymes, and polyphenols. The result? A vinegar that’s not only good for your gut, but also delicious in dressings, drinks, and cooking.
