Bigné pastries, also know as Italian profiteroles, are luscious
treats made from choux pastry, typically filled with custard or cream and often
topped with a rich chocolate sauce. Di Santo’s Bigné are in this tradition but
offer something unique: they do not require refrigeration, allowing for an
