ChalkStream® foods works with fish farmers on the River Test and River Itchen in Hampshire. The company provides fresh and smoked rainbow trout from farms to top restaurants and hotels, farmshops and delicatessens across England and since 2020 has established a sucessful retail market, delivering restaurant quality fish door-to-door, to private customers throughout the Bristish Isles.

ChalkStream® products include fresh rainbow trout, fillets, hot and cold smoked trout, exceptional paté and potted trout. These products are widely available through many Farm shops and community stores throughout Hampshire, London, Sussex, Dorset, Wiltshire and the South East as well as Kent, Cheshire, Somerset, Avon and Devon and Cornwall.

Water from a chalk stream is almost unique to England with 95% of the world’s supply of pure chalk stream water existing in Southern England. Every year rain falls on the South Downs and seeps into the chalk seams hundreds of feet below ground. It is filtered and purified by layers of chalk before emerging again in springs or ‘aquifers’ that flow into the streams and finally rivers like the iconic River Test and River Itchen – the gin-clear chalk streams of Hampshire.

The farms that supply ChalkStream® are built on the sites of old water mills. The mill race provides a huge volume of water for the fish to grow in a constant current that mirrors their natural environment.

The beautifully clean and mild taste of ChalkStream® trout reflects the purity of their chalk stream environment. Constantly swimming in high flows of water produces an exceptionally lean, athletic fish.
