Jarred in its own pH without acidifying, preserving and respecting their original flavour, they are peeled one by one until only the heart remains. Preparing them quickly is key to preserving their quality. The only variety grown in Navarra is the "Blanca de Navarra", this variety can be distinguished from others by its rounded shape and a circular orifice in the upper part, because the leaves do not meet up to close the flower-head off.
