Made with free-run must, it is cold macerated for a few hours with the skins and fermented untouched in American oak barrel at a controlled temperature and then aged 5 months on its fine lees in French oak.
Characteristics: A deep cherry colour with fresh fruit nose of strawberries, raspberries and fennel, intermingled with hints of vanilla and soft toasted. A gentle full palate with a good fruity expression with superbly integrated fruit and oak and a long, complex finish.
Food: With pasta, salads, pizza, fish, poultry, fried food, grilled vegetables, rice dishes, fish in sauce, ham, pâte, grilled meats, sausages, medium matured cheese.
Our comments: It offers the notable freshness of a rosé wine but you feel you are drinking an elegant red wine. A drinking temperature around 14-15 ºC is recommended. To be consumed within 24-36 months after making.
