Alziari Pauline Organic Extra Virgin Olive Oil
After establishing the company in 1868, Nicolas Alziari opened his eponymous shop in Nice in 1932, when the oil from the mill was brought down on horseback to supply the tin drums in the store. Now, they operate across several estates in the Cote d'Azur where they have thousands of olive trees, becoming the largest producer in the region. They also work with other carefully selected farms across Europe, and ensure that their blended oil is of such a quality that itreflects the Niçoise style as it used to be – gentle and sweet, no bitterness and only a touch of pepper.
Work in the olive groves is still done entirely by hand, preserving the trees for future generations. Harvest takes places between November and March and the olives are then pressed in their own mill on the same day.
Alziari’s blended Pauline oil has a smooth texture, with flavours of fresh meadow hay and some black pepper on the finish. Pressed from varieties harvested while still green, this flavoursome oil is ideal for salads, tomatoes and cooked vegetables.
