Iranian Saffron – one of life’s essential little luxuries
Hand-harvested each autumn from special crocus flowers, saffron is the world’s most expensive spice. But saffron’s myriad of uses - to enhance cooking and to promote good health – more than justify its hefty price tag.
Saffron has been used for thousands of years – to dye fabric and as a perfume, as well as for culinary and medicinal purposes. Records detailing its use date back to Roman and ancient Egyptian times. Both labour intensive and time consuming, the production of saffron has actually changed very little since then. The therapeutic use of saffron, to treat a wide variety of health conditions, is becoming much more widely acknowledged. Infused in milk, saffron is a safe and soothing home remedy. But recent reports from the University of Pittsburgh Medical Center confirm the efficacy of saffron as an anti-depressant. Scientists in Australia are calling saffron “nature’s sunglasses” after research found it could protect eyesight from sun-damage while their Canadian counterparts are discovering saffron’s ability to improve human sexual function.
Saffron has a distinct flavour and aroma; its warm earthiness combined with its fragrant sweetness adds depth, richness and complexity to both sweet and savoury recipes. The spice’s vibrantly-coloured strands lend the characteristic saffron-yellow colour to a wide variety of dishes – from familiar dishes like paella to the more exotic Tahchin, an Iranian dish.

Genepy is a traditional liquor produced brewing and distilling mountain herbs of the Artemisia genus, particularly Artemisia Spicata, commonly called Male Genepy, which is by far the most aromatic species among the Artemisias. This rare and valuable herb grows only in the Western Alps at high altitude, on the morainal soil that the glaciers uncover during their summer thaw.
Herbetet Genepy is called after the name of the Herbetet Peak in the Gran Paradiso Massif, where Artemisia Spicata grows copiously. This liquor is produced respecting artisan procedures and techniques that follow the centuries old recipes of our mountain tradition. This liquor is unique, with a natural greenish yellow colour, a very aromatic taste and high healthy qualities. It can be served straight, cold or on the rocks, or prepared as a grog. |

Aspall Suffolk Cyder has been produced at the same site in Debenham, Suffolk since 1728. Today the business is run by the eighth generation of the founder of Aspall, Clement Chevallier.
The Aspall philosophy is to focus on continuously producing the very best range of cyders. To this day the family insist on signing off every batch of cyder ensuring that product quality remains first and foremost.
The recipe for Aspall's unique blend of bittersweet and culinary apples has been handed down and developed through the generations to produce the super premium product that it is today. |
