A NEW kind of Flour Power - A range of wafers made from named flours. We have created a range to fit this concept so that the seven lines read like a range of artisan breads: wheat, rye, spelt, sour dough, oat, three seed and charcoal. Ultra-thin and crisp, we describe them as ‘wafers’ to emphasise this thinness. As you would expect from a company called Artisan Biscuits all our wafers are hand-baked and hand-packed. We only use natural ingredients and almost all of the flour is grown in England, and all is milled here in the traditional way using a miller’s stone (damsel). The flours speak to consumers who have specific needs e.g.
- wheat intolerant: rye
- better for you: spelt
- fashionable: sour dough.
With the exception of the Oat Damsel which is a mixture of oat and wholemeal flour, all the named flours are 100% wheat, rye or spelt. In the case of spelt the flour is also organic. All Miller’s Damsels are suitable for vegetarians.
