Lemon & Pistachio Muffins
Recipe Details
Makes 20
110g butter
150g caster sugar
50g Veru Crushed Lemon Marmellata
1-2 pinches salt
2 whole eggs
250ml milk
15g baking powder
340g Veru Semolina Flour, sieved
15ml vanilla essence
30g roughly chopped pistachios

Mix together the butter, sugar, vanilla essence & salt and beat until white and fluffy. Add the eggs and lemon marmellata and slowly beat into the butter mixture. Mix the baking powder into the sieved flour and gently fold into the butter and eggs. Gradually add the milk, a little at a time, until the mixture clings to the spoon before falling. Add the pistachios to the mix. Spoon the mixture into the muffin moulds until almost full. Preheat the oven to 180c/ 350f/ gas 4 and put the muffins in to bake for 15-20 minutes. Delicious served topped with a teaspoon of crushed lemon marmellata and a teaspoon of mascarpone per muffin. Decorate with some finely chopped pistachios or a little dried rosebud.

Makes 4 pizzas
500g Veru Semolina Flour
20g fresh yeast
10g salt
1 pinch of sugar
300ml warm water
1 tbsp olive oil

Topping:
chopped cherry tomatoes
Veru Anchovy Fillets
fresh basil
black olives
capers

Baking time 10 minutes, plus rising | Mix the flour, salt, and sugar. In a separate bowl mix the water, yeast, and oil until the yeast has dissolved. Add the water, yeast and oil mix to the flour, salt and sugar, and knead with your hands until a compact dough forms (at least 10 minutes of kneading). Cut the dough into four equal pieces and shape into smooth round balls. Place on a greased oven tray and leave to rise in a warm place. When the balls have almost doubled in size, sprinkle a surface with flour and flatten into a pizza shape. Transfer the pizzas back to the greased oven trays. Top with chopped tomatoes, basil, black olives, capers, and Veru Scalia Anchovy Fillets. Preheat the oven to 200°C/gas mark 6. Put the pizza in the oven and bake for 10-15 minutes.

POACHED PEACHES WITH A MUSCAT & PISTACHIO SYRUP

Makes 4 portions
4 peaches, slightly under ripe
125g mascarpone
½ vanilla pod
½ cinammon stick
2tsp Veru Truly Sicilian Nero d'Avola Jelly
½ litre of water
50g caster sugar
100ml muscat wine
40ml orange flower water
2tbsp Veru Truly Sicilian pistachios in acacia honey

Place the vanilla pod, cinnamon, Nero d'Avola jelly, water, sugar, orange flower water and muscat in a pan and bring to the boil. Allow to boil for 5 minutes. In the meantime cut the peaches in half and remove the stone if you can, or leave it and remove after cooking. When the liquid is ready, add the peaches and cook until they become just soft. Remove the fruit from the liquid, leave to cool down. Reduce the liquid until it becomes syrupy. Add the pistachios. Join the two peach halves with a spoonful of mascarpone and place on a plate. Drizzle with the syrup and pistachios, top with a sprig of mint.
