African Miracle - Honeybush tea is harvested from Cyclopia Intermedia, a scented plant with yellow flowers and trifoliate leaves, which is cultivated around Haarlem in South Africa. This tea has a gorgeous fragrance from sunflower, jasmine & rose petals and natural grapefruit flavouring. African Miracle is naturally caffeine free and is high in iron, magnesium and Vitamin C.
Tasting Notes African Miracle honeybush tea makes a pale, rust red infusion with a slightly floral, honeyed taste. It is light, very pleasant and easy to drink at any time of the day. Drink alone or add some sugar or honey.

ASSAM BUKHAI TGFOP Bukhial is a very special tea estate owned by the Williamson & Magor, the world's largest family owned tea company, it covers 2052 acres of which around 1420 acres is tea plantation. Bukhial is located in Golaghat District of Assam, close to Nagaland where wild elephants still roam. Rainfall in this area is modest, making near perfect growing conditions as the tea bushes grow slowly, which gives this 2nd Flush its mellow and distinct malty character. JASMINE SILVER HEART Tea Bloom is hand rolled and hand tied. The method used to make this special Jasmine Silver Heart Bloom is as follows:
* They begin with specially selected tea leaves (Leaves that are long and mottled white),
* The leaves are tied together with the blossoms inside and then carefully and meticulously the heart shape is created.
* The tea is steamed and dried which gives each bloom a delicate flavour and aroma.
The story behind the Jasmine Silver Heart is a wonderful romantic tale, look at the night sky and the constellation called Aquila (in China it is the Cowherd) and then to the Milky Way (in China it is the Silver River) in there is a star known as the Weaving Maid. The seventh daughter of the Mythical Jade Emperor was the weaving Maid. One day she caught sight of a passing Cowherd and fell in love, when he visited her, she would stop weaving and soon they forgot their work completely! The Jade Emperor become angry that they shirked their duties, and banished them to opposite sides of the Silver River. The Weaving Maid and the Cowherd were devastated so the Jade Emperor related a little and to soften the blow let them meet on the bridge over the Silver River for one night every year on the seventh day of the seventh month. This is by the Chinese calendar on August 2nd when these two stars do actually meet! So this tea bloom was created to represent the flowing stars of the Silver River, it is a beautiful story and tea, each ball is made with the spring production of green leaf tea and scented with jasmine. The long silvery leaves are carefully hand tied in an intricate pattern that unfurls when infused. The taste is sweet notes of Jasmine and wisps of honey.

Nepal FTGFOP1 Maloom black tea comes from a small estate on the “roof of the world” that covers approximately 200 hectares and its slopes range from 3500 to 5500 feet above sea level. The Maloom Estate produces outstanding teas but has a small total annual of around 40 tons. The first harvest begins from late February and continues to mid-April and follows the first light showers after winter making this is springtime tea so the young leaves produce a light tea. This Tea has the appearance of the best Sikkim tea with the exquisite taste and character of the finest Darjeeling tea.
Tasting Notes Nepal FTGFOP1 Maloom - The young leaves with their silver coloured tips brew a light golden bronzed coloured tea, with a delicate delightful flowery aroma that can be compared to the best Darjeeling. Drink with or without milk throughout the day but especially good for afternoon tea. A connoisseur’s delight.

The Background - Peregrine 1st Flush Mountain is an extremely rare and quite delicious black tea from Yunnan Province. The forested wild hills of Yunnan are home to the magnificent Peregrine Falcons and in some of the remote mountain villages Peregrines are revered as a sacred and spiritual bird, and wonderful legends regarding them flourish, so naturally since Yunnan is also where to some of the world’s finest tea are grown there is wonderful fable in which a tea owes its existence to the Peregrine falcon!

The Fable of Peregrine 1st Flush Mountain.................

A young boy was out hunting rabbits above his village, and as he ventured up the steep forested slopes higher than ever before, he came across a falcon caught in a scare – in those days it was customary for the aristocrats to keep Peregrine Falcons for hunting and as the boy examined the scare he found it had the great mark of a fierce local warlord. So the boy realised he faced a dilemma, rescue the bird and set it free or face certain death if he action was discovered by the warlord. Whilst deep in thought a sudden sharp wind whisked through the forest carrying the cry of this falcon, it said “if you release me from this trap, I will show a great field of undiscovered tea bushes which will make an amazing new variety of tea and this will make you rich enough to pay your tributes to the warlord and more besides”, at this the boy released the bird and true to the Peregrine Falcon’s word lead him to this remarkable new tea.
Tasting Notes

Over the years this extraordinary tea has come to be regarded as one of the best produced in Yunnan, it is manufactured during the spring Flush and is graded as TGFOP Special (Tippy Golden Flowery Orange Pekoe Special) - the cup overflows with vivacious maltiness and brews a beautiful golden coppery colour infusion. Use fresh filtered water at 203F/95C and brew for between 2 -5mins depending on your taste.

HOW TO MAKE ICED lemon TEA
1. Brew a teapot of delicious tea, and for lemon ice tea I suggest a combination of SHERSTON TEA COMPANY’s China White Monkey (3 teaspoons) & ASSAM TGFOP2 (1 teaspoon) per large teapot. See below for brewing instructions
GREEN TEA
To make Green tea boil water and leave to cool for around 1-2 minutes or use water at 158F - 70C. Boil always freshly drawn water either from tap or once it has been through a filter as if you use water that has already been boiled in a kettle it reduces the oxygen content in the water. The warm cup method is very good for making Green Tea, as you are less likely to find the tea is bitter with this method, as the amino acids that give the tea its flavour dissolve at a lower temperature than the tannin and the tea will taste sweeter. It is really important not to let the tea brew for over 3 minutes or to leave the leaves in the teapot. It is possible to use the leaves again but you must take out all the water and fill the teapot again with fresh water.
As a guide infuse 1-2 teaspoons of Green Tea per cup for up to 2 -3minutes depending on the strength you enjoy.
Take care not to pour boiling water on to the leaves as this will scald the leaves and stop the leaves from releasing their flavour and damage the delicate fla-vour. It is important for the leaves to open and release the delicate aromas and taste, drink immediately and do not let the tea over infuse as it can become strong and slightly bitter if left too long.
BLACK TEA
To make Black tea boil water and leave to cool for 30 sec -1 minute or use water at 203F - 95C. Take care not to pour actual boiling water on to the leaves as this will scald the leaves and damage the flavour. It is important to use good fresh filtered water and to allow time for the leaves to infuse releasing their fragrance and flavour, after pouring (it can be a benefit to use porcelain cups or mugs) drink immediately and do not let the tea over infuse as this can make the taste too strong and slightly bitter. Use either the warm cup or two tea pot methods as described for White Tea, you can use the leaves to brew a second pot but will have subtle changes in taste and aroma
As a guide infuse 1-2 teaspoons per cup for up to 3 - 4mins for depending on the strength you enjoy. Can be drunk with milk and sugar but if you are using a good single estate or first /second flush or a black tea which is flavoured with fruit or flowers then drinking it without milk is highly recommended.
2. Infuse for 3-4 minutes
3. Remove tea leaves
4. Allow to cool
5. Pour tea into a large jug and add 4 teaspoons of sugar, honey or sweetener to taste
6. Add 3- 4 sliced fresh lemons.
7. Pour over 2 cups cool filtered water. This water should be added to taste as it will dilute the taste.
8. Chill in the refrigerator

Serve in a tall glass with ice cubes and garnished with a lemon slice drink and enjoy!
